Look no further! This recipe for strawberry filling in really easy to make, requires minimum prep, and tastes amazing! You can also use sliced fresh strawberries covered with sugar and refrigerated overnight if you don't want to use the frozen variety.
1 pkg (16 ounces) frozen sliced strawberries
1/3 cup granulated sugar
3 tablespoons cornstarch
1 teaspoon lemon juice
1 teaspoon vanilla extract
Drain strawberries; reserving any liquid.
Set strawberries aside.
Add enough water to strawberry liquid to equal 1 1/4 cups.
In large saucepan, combine strawberry liquid, sugar, cornstarch, vanilla extract, and lemon juice; mix well.
Heat and stir until mixture boils and thickens. Cool completely.
Stir strawberries into the cooled mixture. Refrigerate until ready to use. Refrigerate until ready to serve.
